Baked Crispy Coconut Chicken with Sweet & Spicy Apricot Sauce =AMAZING
I have been so excited to make this recipe all week! It turned out even better than I could have imagined. I want to eat it all week! I promise you will not be disappointed with this amazing goodness.
I got this recipe at
http://www.sixsistersstuff.com/2012/01/baked-crispy-coconut-chicken-with-sweet.html
Baked Crispy Coconut Chicken Recipe:
Preheat oven to 450 degrees. Give coconut a rough chop so it’s about the same size as the Panko pieces. Combine it with Panko and spices in a shallow dish. Mix well to distribute all of the spices. Place the flour in another shallow dish, and the egg in another. Give the egg a quick beating. Working with one chicken tender at a time, dredge in flour and then dip in egg, and then finally coat in the coconut Panko mixture. Press in with your fingers to make sure the entire thing is well coated.
Place chicken tenders on a foil-lined baking sheet (for easy clean up!) that has been sprayed with non-stick cooking spray. I give mine a teeny drizzle of olive oil on top to help them crisp nicely, but it’s optional.
Bake in your 450 degree oven for about 20 minutes or until juices run clear. Try not to overcook them because chicken tenders go from perfect to overcooked really fast! If your tenders are on the small side, they could even be done in about 15 minutes so keep an eye on them. If they’re big they can take more like 25. The coconut will be nice and golden and the panko crisp, but light in color still. (Mine took 15 minutes and they were big and small.)
Sweet and Spicy Apricot Dipping Sauce Recipe:
1/2 c. apricot preserves (you can use sugar free if you wish)
1 Tbl. rice wine vinegar
3/4 tsp crushed red pepper flakes
Combine all the ingredients and place in a small bowl.

Do I love as God does?
Do I love my husband as God does at all times? Do I love my children when I am exhausted and they are having hard days? Do I love my neighbor who does not know Jesus when I hear them cussing or see them smoking? What thoughts do I have of them? Are they thoughts that break my heart wanting for them to see the love of God? Do I love my sister in Christ when I have worked so hard to plan something and I hear that she is grumbling and not happy with the work I put into it? Do I feel like I need to get even? Do I stop and pray for her? Do I think wicked thoughts towards brothers and sisters in Christ? Do I find myself jealous that this person is hanging out with that person or that couple gets to go on a nice vacation and I don't? Do I ever find myself having thoughts such as, "thank goodness I am not like that person, or thank goodness I am better than that." Do I ever hope a ministry I am involved in flourishes more than the last person that was involved.
Yes I sin in everyone one of those ways. I feel deeply convicted as I am going through one of the best sermon series I have ever listened to. I want so bad to be more like Jesus. I want so bad to have a heart that loves people regardless of any situation. I want to stand before my Father in Heaven someday and hear Him say, "well done good and faithful servant." I want so bad to know the scriptures in and out and meditate in them day and night.
I highly recommend this sermon series to all of you! It will be life changing if you really spend the time to listen to each message and take notes and go back to them over and over again.

I would love to hear your thoughts if you end up taking the time to listen to this!
So thankful for a husband that wants to know God more and more daily. I love that he spends so much time in the word and listening to sermons and reading great books. It benefits me in so many ways. I pray that I would grow to appreciate this in never take advantage of the husband I have!

11 Months old!
My goodness our little girl turned 11 months old on Tuesday. I can not believe she will already be a year! It has gone by too fast and she has changed way too much. What a personality this baby has and so many expressions to go along with it. She loves to look at cats and dogs, she loves reading books, going to the zoo, playing with her big brother, being around people, she has took on crawling on all fours now but still army crawls most of the time, she has 7 teeth with more coming in, she walks along everything and pulls herself up on everything. We had to make our home childproof last weekend which makes me feel better. Our fireplace looks silly with a giant foam noodle wrapped around it but it has already kept Abby away from the emergency room it least once. She is still a terrible sleeper and nurses all day long it seems. She does not like food, but at times will eat a tiny bit of a banana or some puffs and maybe some bread. I try to give her oatmeal and veggies but she loves her mommas milk. I hope at a year she will love to start eating but we will see. I just have no idea what to expect with this little one. She is very stubborn like her momma and has quiet the attitude. She is also as sweet as can be and mostly content. If we can get through these rough nights I think things will be so much better for me. Lack of sleep for momma is just hard. I know this too shall pass and in the meantime I am soaking in this stage as much as possible. We love our sweet girl and she really brings so much joy to the Kinley home!

Little Guy turns 11
Our sweet boy celebrated his 11th birthday with us this weekend. He had a wonderful weekend full of festivities! We are so thankful for Collin! I wish everyone could see the love he has for his baby sister. It is the sweetest thing! And Abby loves him just as much and misses him when he is not here. He has taught her how to make a gun with her fingers and make the noises:) Normally that would not make me happy but it is really cute to see how he bonds with her. He has recently taught her to make car noises and push a car around. She goes "vroom vroom." I think his favorite thing to do with Abby is hold her during the worship music at church. He begs us every Sunday:) He also loves serving in the nursery. Our little guy is not so little anymore. He has been in Junior High for the last month. He really is enjoying it. I have already seen such a change in him. Daddy and momma are not as cool as they use to be:) We continue to pray his heart grows towards Christ and can be the light to his friends and family who are not saved. We pray he will seek God and want to serve his dad in Heaven above all. We love you so much sweet boy!!!!
