A Must Read....
"Kisses From Katie"by Katie Davis
This book is absolutely the best book I have ever read! I know I exaggerate a lot but it was. I am still in tears as I just finished the book. It was convicting and life changing!
Katie lives in Uganda, she is 22, and adopted 14 children and started a ministry called Amazima! She is living out what God calls us too! And she gives all the glory to God always. Her non-profit provides schooling and food and clothes to children. She also feeds the hungry and provides medicine and so many other things but most importantly shares Jesus with these people. She left her comfortable life were she had everything a earthly person would desire at the age of 18 to live in Uganda!

10 Months Old
Our little girl turned 10 months old on Saturday! I can not believe how fast the time is flying by. She is our sweet little girl with a spunk! We would not want her any different. She makes us laugh with her personality and brings joy to all of those around her. She just started scooting/ crawling all around a week or so before turning ten months, she has 4 teeth with two more that have almost broke through, she absolutely loves dancing so much especially with her one pointer fingers out. I can not say enough about the love I have for Abby! She is our miracle baby and I adore every second with her!
First Day of School
Our little guy started middle school today! 6TH GRADE!!! We are so excited for him and wonder what this year will bring. I am sure there will be many changes. He could not wait to put on his new shoes and clothes and meet his friends in front of school. Daddy got to drop him off on his first day!
Praying Collin has a fruitful year in the 6th grade and will grow closer to Jesus daily and witness to his friends and family!

Healthy Delicious Banana muffins
Another great and super healthy and easy muffin recipe!
Go Pinterest!!! And did I mention I love my muffin tin!!!
Ingredients:
*2 /1/2 cup oats (old fashioned kind, not quick cooking)
*1 single serving cup of plain low fat (i used fat free) greek yogurt
*2 eggs
*3/4 cup sweetener of sugar. I used Agave and only half. You could even use applesauce.
*1 1/2 tsp baking powder
*1/2 tsp baking soda
*2 bananas
Important: The paper liners don't work well when baking with a base that does not include flour, they always seem to stick to the paper. I sprayed the muffin tin with non-stick cooking spray or you can use foil cupcake liners or a silicone muffin pan.
Let the Baking Begin!
1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan).
2. Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth.
3. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.
Next time I am adding nuts and a little bit of chocolate:) Or peanut butter:)

Mini Chicken Pot Pies
A friend sent this to me. She found it on pinterest! These were delicious! My family loved them and Collin had so much fun helping me cook!
Ingredients
1 tablespoon vegetable oil
1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 medium onion, chopped (1/2 cup)
1/2 cup chicken broth
1 cup frozen peas and carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground thyme
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1/2 cup milk
2 eggs
Directions
Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Add onion and chicken broth; heat to simmering. Add frozen vegetables and seasonings. Heat until hot, stirring occasionally until almost all liquid is absorbed. Cool 5 minutes; stir in cheese.
In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup chicken mixture. Spoon 1 tablespoon baking mixture onto chicken mixture in each muffin cup.
Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.

Alum Rock Park and back home...
Well I had no idea our trip would have been so fantastic. I had no idea what to expect of San Jose. I had no idea I would not want to come home! I know if we were there for awhile longer I would be ready to come home but I have to say that being surrounded by nature was so refreshing! It always reminds me of back home in Illinois! I just miss the trees so much. There was a ton of stuff to see and it was just awesome to spend time with Brian! Other than a major lack of sleep it was a wonderful trip! Thank you Lord for opening these doors for us! Our flight back was good but Abby was for sure done! She is exhausted and hopefully will get back to her routine soon. I am excited to get out of the house in San Diego more and start checking out places I have never been. It was so great being active and seeing so many wonderful places!
